Chapter 353: Chapter 150: Back to the Old Trade, Setting Up the Stall Again

When Su Chen brought out a serving of red braised pork on a jade-white plate, accompanied by a bowl of rice.

Fang Chang’s expression was something like this: (¬‸¬)?

"Hold on... Boss Su? How come I get a big bowl of red braised pork, but the one my wife is eating looks so delicate?"

To be fair, this portion of red braised pork did look rather exquisite.

On the jade-white plate were nine perfectly square pieces of red braised pork. One corner was garnished with three decorative hawthorn berries, with a single leaf of Cilantro beside them.

Setting the flavor aside, it was certainly visually striking.

"Tch, it just happens to suit the eating habits of people from the north and south. What do you know!"

That wasn’t Su Chen who spoke, but Jiang Yuan.

"We southerners tend to eat more delicately. Northerners are a bit rougher around the edges; they’re all about large portions! So, it would’ve been better if there was a little less of this red braised pork. No girl in the south could eat nine pieces in one sitting."

Su Chen nodded. "Well said! This afternoon at the stall, I’ll change the red braised pork serving from nine pieces to five."

Then he added, "Price stays the same."

Hiss!

Fang Chang stared at Su Chen in disbelief.

’What a shameless profiteer!’

"Boss Su, so what’s the price going to be for this red braised pork?"

"Just as your wife said, the salty and savory version is relatively simple and quick to make. One serving is one ladleful for 58 yuan."

Fang Chang nodded in agreement. The price wasn’t outrageous.

One ladleful was a pretty generous amount. If you ignored the fact that it was so delicious you’d want more, one ladleful with a bowl of rice would definitely be enough to fill up an average adult.

Of course, the kind Boss Su made was another story entirely.

"As for the sweet red braised pork," Su Chen said, looking at the plate in front of Jiang Yuan, "we’ll sell one serving for 88. Standard five pieces."

Damn!

Fang Chang shot his wife a nasty glare.

’If you hadn’t run your mouth, I could have gotten nine pieces for 88 yuan! Now, I can only get five!’

’Damn it!’

Jiang Yuan was completely unbothered. "Five pieces isn’t a small amount. Who binges on red braised pork like there’s no tomorrow?"

With that, she picked up a perfectly square piece of red braised pork and placed it on her rice.

The rich, thickened sauce clung to the meat, stretching into a long, thin thread before it broke and instantly melted into the grains of rice.

Jiang Yuan carefully blew on the piece of meat a couple of times before popping the entire thing into her mouth.

All eyes were on her, watching her reaction, especially Su Chen and Zhang the Second.

"Mmm..." Jiang Yuan nodded in satisfaction. "Sweet and savory. Not too fatty or greasy, and the lean meat isn’t dry. The texture is pretty good!"

’That’s it?’

Su Chen found that hard to believe. In the practice simulation, this dish was A Level. If someone who loved sweet red braised pork ate it, it would very likely shoot straight for S Class.

’And this was the result?’

After finishing the piece of pork, Jiang Yuan shoveled a mouthful of rice. "It’s really good. I’ll have another!"

Su Chen felt Jiang Yuan’s reaction was far too subdued.

The group of them watched the girl from Yangzhou.

One piece, then another, and another.

Fang Chang found himself swallowing hard several times as he watched, right up until Jiang Yuan picked up the very last piece of pork.

"Honey, didn’t you say no girl from the south could eat nine pieces of red braised pork at once? So... how about you give that last piece to me?"

Jiang Yuan shook her head. "This is my breakfast and lunch combined. I’m skipping lunch today!"

MUNCH, MUNCH~

Fang Chang scratched his head. Her logic felt surprisingly sound, and he couldn’t argue with it.

"Hic~" After polishing off the plate of red braised pork and rice, Jiang Yuan beamed at Su Chen. "Boss Su, is there any more of that pork ready? How about I have another serving?"

"Uh?" Su Chen asked, "So, what did you think of the red braised pork?"

He was hoping for some constructive feedback, preferably a few pros and cons.

"It’s delicious, which is why I want another serving."

’Alright then...’ Su Chen glanced helplessly at Fang Chang. ’This girl can’t articulate her thoughts, so I’ll have to resort to more extreme measures.’ "Fang Chang, settle your wife’s bill."

Fang Chang: ???

"Boss Su, didn’t you say this was a taste test?"

Su Chen grunted in affirmation. "But I don’t recall saying it was a *free* taste test."

"But aren’t taste tests supposed to be free?"

Fang Chang was about to argue further, but Jiang Yuan pinched the flesh at his waist. "What are you wasting time for? If he tells you to pay, you pay! Pay for two servings. I want another one!"

DING!

As the WeChat notification confirmed a payment of 176 yuan, Su Chen silently checked the mission progress in his mind.

The progress bar had increased by another 88 yuan.

NICE!

’Looks like Jiang Yuan just isn’t good at expressing herself. This sweet red braised pork really hit the spot for her!’

’In that case...’

Su Chen patted Fang Chang’s shoulder. "I’ll hold onto the money for that second serving. The first portion I make this afternoon will be for your wife."

Fang Chang watched, dumbfounded, as Su Chen dragged Zhang the Second back into the kitchen.

"Wait, since when do we have to prepay? Who’s the supplier here, him or me?"

Fang Chang did some quick, bitter mental math.

’I’m probably spending more money at Boss Su’s than I’m earning from him!’

Damn!

The process for making the salty and savory red braised pork was extremely simple. It just needed to cook in the pressure cooker for a sufficient amount of time.

Then, it was all scooped out and left to soak in a stainless-steel container to let the flavors infuse.

When the stall opened, if a customer ordered the salty version, he just had to ladle some meat and broth into a wok and reduce the sauce over high heat.

As for the remaining hundreds of pounds of pork belly, it had to be blanched, cut into small cubes, and then slow-cooked over low heat for ninety minutes using Su Chen’s unique hawthorn-based recipe.
